Kir Royale Jello Shots

It was my roommate's birthday the other day, and champagne always seems like a good choice for celebrations. We had plans to go to our friends' house that evening, so Kir Royale Jello Shots seemed appropriate. I am a  big fan of the more grownup alcoholic jello shots, where you mimic the ratio of a classic cocktail.  The basic formula is this:

4 packets flavored or unflavored gelatin
1 cup boiling water
4 cups liquor, juice, mixers, in the ratio of the cocktail

In this case, I did 3 1/2 cups champagne, 1/4 cup lime juice, and 1/4 cup chambord
I was going to sink the raspberries into the jello after letting it chill for an hour, but I fell asleep, so the next morning i poured some hot water over top to melt a bit of the top layer and stuck the raspberries on that way.

Lemon Raspberry Corn Muffins


Lemon Raspberry Corn Muffins

1 1/2 c fine yellow corn meal
3/4 c flour
2/3 c sugar
1 tbsp baking powder
1 tsp salt
1 c milk
1 tbsp raspberry vinegar
zest and juice of 1 lemon
1 egg
3 tbsp melted butter
1 container raspberries (or 1 c frozen)

Preheat Oven to 400

combine dry ingredients. In separate bowl combine wet ingredients (and sugar). Combine wet and dry just until combined. Fold in raspberries. Pour into a greased muffin tin and bake for 20-25 minutes. Makes 1 doz

Jasmine Raspberry Cupcakes with Honey Frosting

I made these cupcakes for my friend Julia's Birthday party last night: (I got the idea from The Cupcake Project)

Jasmine Rasberry Cupcakes with Honey Frosting

Cupcakes
2 cups sugar
1 cup butter, softened
3 large eggs
1 tsp vanilla extract
3 cups cake flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup milk
5 jasmine teabags
2 tbsp raspberry vinegar

Preheat oven to 350.

Beat sugar and butter at medium speed with a heavy-duty electric stand mixer until creamy and fluffy, about 5 minutes.

Add eggs, 1 at a time, beating until yellow disappears after each addition. Beat in vanilla.

In a saucepan scald milk and steep teabags in milk. The longer you steep the better. I did 15 minutes, but it could have been longer

Whisk together flour, baking powder and salt in a small bowl; add to sugar mixture alternately with milk and vinegar, beginning and ending with flour mixture. Beat a medium-low speed just until blended after each addition. (batter will be thick)

Honey Frosting
cream 2 sticks butter at 2/3 c honey. Add 4-5 cups powdered sugar. Add 1-2 tbsp milk depending on consistency you desire.
